Fall is Here! Zesty Pumpkin Soup Recipe

Fall is finally here!!! Which means long walks in the leaf covered woods, warm sweaters, and comfort foods! This recipe is one of my all time favorites for fall, its fragrant spices make a house really feel like home. Now I know it may not sound appetizing to a lot of people, especially the fact that the last step is to blend it in a blender like a smoothie... But please trust me when I say that this will be the best recipe for fall lovers!

Yeilds: 6 cups

Ingredients:

¼ cup Butter

⅛ tsp Ground Coriander

½ tsp salt

⅛ tsp crushed red pepper (optional)

1 tsp Curry Powder

1 cup Chopped Onion

1 cup Garlic Clove, diced

3 cup Chicken Broth 1 can (16 oz.) of Pumpkin Puree

1 cup Half and Half

Directions:

  • In a large pot/saucepan, melt the butter. Then saute onion & garlic until the onion is soft.

  • Add curry, salt, coriander, and (optional) red pepper. Cook for 1 min.

  • Add broth and boil gently (uncovered) for 15-20 minutes.

  • Stir in the pumpkin and Half and Half, cook for 5 minutes.

  • Pour into blender and blend until creamy.

*Store leftovers in airtight container in refrigerator.
